Description
This cinnamon raisin sourdough is soft, naturally sweet, and full of warm spice and juicy raisins. Perfect for toasting, snacking, or gifting!
Ingredients
100g active sourdough starter
375g water
500g bread flour
10g salt
1–1.5 tsp ground cinnamon
150g raisins, soaked & drained
Optional: 2 tbsp brown sugar, 50g chopped walnuts
Instructions
1. Mix flour and water. Let rest 30–45 minutes.
2. Add sourdough starter and salt. Mix well.
3. Let bulk ferment 4–5 hours with stretch & folds. Add raisins after second fold.
4. Shape and optionally roll in cinnamon sugar.
5. Proof in fridge overnight (8+ hours).
6. Bake at 475°F covered 20 min, then uncovered 20–25 min until deep golden.
Notes
Use soaked raisins to avoid dry pockets.
Try a swirl of cinnamon sugar before final shaping.
This loaf keeps 4–5 days and toasts beautifully.
