Baking Beyond the Basics
Some bakers follow tradition to the letter. I prefer to use tradition as a starting point—and then take it somewhere unexpected.
I grew up in a small coastal town near Portland, Oregon, where the air smelled of sea salt, fresh herbs, and the occasional bakery loaf cooling by an open window. While other kids traded snacks at lunchtime, I was experimenting with mixing rosemary into my dinner rolls or swirling cinnamon into my sandwich bread. Even then, I knew bread could be more than a backdrop—it could be the star.

When I discovered sourdough, it felt like unlocking a door to a bigger, wilder kitchen. Here was a bread that could carry any flavor I dreamed up: roasted garlic and Parmesan, za’atar and olive oil, dark chocolate and espresso. My goal? To make every slice an experience.
Why I Specialize in Creative Inclusions
Baking is part science, part art—and inclusions are where the art really comes alive. Folding in roasted vegetables, herbs, cheeses, seeds, or fruits doesn’t just add flavor. It transforms the loaf, creating pockets of surprise in every bite.
To me, inclusions are about storytelling. A loaf with sundried tomatoes and basil might recall a summer trip to Italy. A dark chocolate and cherry boule feels like a cozy winter afternoon. Each ingredient brings its own voice, and I love arranging them into harmony.
